  1. Preheat the oven to Gas Mark 4/ 350 Fahrenheit/ 180 Celsius
  2. Prepare a baking tray with a baking sheet, grease the sheet with olive oil
  3. Mix the almond flour, parmesan cheese, paprika, salt, pepper, chilli powder and turmeric and dried oregano in a bowl until combined
  4. Whisk the eggs in another bowl, add a pinch of salt and pepper and 1 tbsp hot sauce (can add more/less based on spice tolerance)
  5. Make sure the chicken breasts are dry and place in the egg mix making sure there is no excess egg
  6. Now place the chicken in the dry mix and ensure it is coated completely
  7. Repeat for all chicken pieces
  8. Place on the baking sheet and bake for 30, remove from oven and check to see if fully cooked. If not, continue to bake and check every 5 minutes
  9. Whilst the chicken is baking, start preparing the marinara sauce
  10. In a pan, heat 1 tbsp olive oil
  11. Add the onions and chopped garlic and fry until onions are soft and golden
  12. Add in the chopped tomatoes, 1/4 cup water, freshly chopped tomatoes, salt, pepper and dried oregano. Mix occasionally
  13. Once sauce is combined, add the tomato puree mix and then take off the heat and let cool for 5-10 minutes
  14. Once slightly cooled, use a hand blender and blend until sauce is thick.
  15. Add the basil and mix
  16. Place the baked chicken into an oven dish and cover with marinara sauce
  17. Add sliced peppers, and cover with mozzarella and sprinkle with parmesan cheese, oregano and salt and pepper
  18. Bake in the oven for 20 minutes or until cheese becomes golden
  19. Whilst this is baking, prepare the side salad
  20. In a bowl, combine the sliced carrots, lettuce, salt, pepper and olive oil
  21. Sprinkle a pinch of parmesan cheese
  22. Once the parmesan is cooked, plate and serve with the side salad
  23. And enjoy!
