
I made this a few days ago and it was a hit with my parents! I trialed a few substitutes in this recipe and it went well!
Prepping time – 30 minutes
Cooking time – 1 hour
Total time – 1 hour 30 minutes
Ingredients:
Baked Chicken
- 3 x sliced chicken breast
- 1 cup Grounded Almond
- 2 tbsp Parmesan cheese
- 1 tbsp paprika
- Chilli powder (as desired)
- 1/2 tsp turmeric
- 1 tbsp oregano
- Salt (as desired)
- Pepper (as desired)
- 2 eggs (whisked)
- 1 tbsp hot sauce (sriracha)
- Peppers sliced
- Mozzarella (thin slices/crumbled/grated)
- Extra Parmesan (for sprinkling)
- Olive oil (for greasing)
Marinara Sauce
- 1 onion (thinly sliced)
- 2 tins chopped tomato
- 2 fresh tomato (chopped into quarters)
- 3 cloves garlic (chopped into small pieces)
- salt, pepper and spices to taste
- 1 tsp dried oregano
- 1 tbsp dried basil/ handful of fresh basil leaves chopped
- 1 tbsp tomato puree
Side Salad
- 3 medium sized carrots (thinly sliced)
- Handful lettuce leaves (thinly sliced)
- 1/2 cabbage (thinly sliced)
- Salt and pepper (to garnish)
- 1 tsp olive oil
Equipment
- Whisk
- 3 mixing bowls
- Oven dish
- Pan
- Baking tray
- Baking sheet
- Someone to wash the dishes (VERY IMPORTANT)
Instructions
- Preheat the oven to Gas Mark 4/ 350 Fahrenheit/ 180 Celsius
- Prepare a baking tray with a baking sheet, grease the sheet with olive oil
- Mix the almond flour, parmesan cheese, paprika, salt, pepper, chilli powder and turmeric and dried oregano in a bowl until combined
- Whisk the eggs in another bowl, add a pinch of salt and pepper and 1 tbsp hot sauce (can add more/less based on spice tolerance)
- Make sure the chicken breasts are dry and place in the egg mix making sure there is no excess egg
- Now place the chicken in the dry mix and ensure it is coated completely
- Repeat for all chicken pieces
- Place on the baking sheet and bake for 30, remove from oven and check to see if fully cooked. If not, continue to bake and check every 5 minutes
- Whilst the chicken is baking, start preparing the marinara sauce
- In a pan, heat 1 tbsp olive oil
- Add the onions and chopped garlic and fry until onions are soft and golden
- Add in the chopped tomatoes, 1/4 cup water, freshly chopped tomatoes, salt, pepper and dried oregano. Mix occasionally
- Once sauce is combined, add the tomato puree mix and then take off the heat and let cool for 5-10 minutes
- Once slightly cooled, use a hand blender and blend until sauce is thick.
- Add the basil and mix
- Place the baked chicken into an oven dish and cover with marinara sauce
- Add sliced peppers, and cover with mozzarella and sprinkle with parmesan cheese, oregano and salt and pepper
- Bake in the oven for 20 minutes or until cheese becomes golden
- Whilst this is baking, prepare the side salad
- In a bowl, combine the sliced carrots, lettuce, salt, pepper and olive oil
- Sprinkle a pinch of parmesan cheese
- Once the parmesan is cooked, plate and serve with the side salad
- And enjoy!
